In Reggio Emilia and Modena, "Secco" is the traditional name given to any vinegar which isn't balsamic. Our Secco del Borgo, produced by Il Borgo del Balsamico is made from local Trebbiano grapes (the same used in balsamic vinegar production) and is prepared following the ancient local artisan method:

Oak wood chips are placed in the centre of a wooden cask (today a steel vat) and the wine is added. The acetobacteria on the surface of the wood very gradually acidify the wine, slowly turning it into vinegar. The Secco is then mellowed in oak casks where it takes on its warm amber colour and acquires its lovely rounded taste.
