Wild Boar Bresaola is a true gourmet specialty and an outstanding addition to any meat platter. The leanest meat from the thigh is cured with aromatic Tuscan herbs and spices to produce an incredibly alluring aroma and taste.
Wild boar bresaola has many uses, notably on its own, sliced thinly with a drizzle of good olive oil and a splash of lemon or served with shavings of 30 month Parmesan. It also pairs magnificently with fruit - try it with pears, kiwi or avocado together with a soft cheese and walnuts.
Pieces will keep for a few weeks wrapped in foil in the fridge.

The Salsiccia Napoli is Italy's version of the Spanish Chorizo and can be used in much the same way. Made by 80 year old maestro Signor Gelli at his workshop near Siena in Tuscany, his Napoli sausage uses only the finest local pork cured with herbs and fresh red chillies.
When you try it, you initially taste all the delicious flavour of the pork and aromatic herbs while the chilli is very gradually released reaching a fine crescendo of taste and heat on the palate. Marvellous - and a great price too!
Ideal for many dishes including jambalaya, paella, spicy pasta dishes or for an antipasti platter. Large salame in classic "U" shape. Plenty for everyone.

This truffle salame is really something to experience. You need to be careful though as most truffle salami are simply infused with truffle aroma and flavourings. Our version by Gelli Salumi near Siena, is cured with real pieces of Italian truffle to give a much fresher, fuller taste.
Signor Gelli uses only the finest local pork, truffles and herbs and the combination of flavours and aromas really shines through. Not so common in the UK and a guaranteed hit at the dinner table!

Porchetta is one fof Italy's most famous meats. Ours is prepared by artisan expert Signor Gelli at his workshop near Siena in Tuscany.
Premium quality pork loin is wrapped in Pancetta (if you've never tried it, Mr Gelli's Pancetta is fabulous, a Double Gold winner at the Great Taste Awards) and seasoned with Tuscan herbs and spices. It produces a lovely aroma and savoury flavour and is the business on panini or at a picnic. Try it also as a delicious starter with vegetables in oil and pickles. Comes in handy sized portions and best sliced thinly.

Buristo is the ancient, classic Tuscan black pudding from Siena. It is even mentioned in Homer's Odyssey as a prize given to Ulysses.
Our Buristo is prepared by 80 year old artisan expert, Signor Gelli at his workshop near the lovely Siena and San Gimignano area. Mr Gelli follows traditional recipes which include seasoning with citrus fruit, sultanas, pinenuts and Tuscan spices to produce a blood sausage which is soft, almost creamy, with a lovely aroma and delicate yet spicy flavour.
Buristo is getting harder to find even in Italy and is quite rare in the UK. Try it on panino, as part of a cured meat platter or as a side to boiled meat dishes, with a nice glass of Tuscan red.
