Traditional Balsamic of Modena (12 Years) DOP -Affinato (100ml) - When you hear people talk of a rich, super-expensive balsamic elixir, they are talking about the Traditional DOP Balsamic vinegars. Aceto Balsamico Tradizionale di Modena DOP is the real deal. Only 100 or so producers gain the official seal of the Consortium of Traditional Balsamic Vinegar of Modena and the Traditional DOP vinegars from Compagnia del Montale have always been ranked among the finest. This silver label is aged for a minimum of 12 years in small casks of 6 different types of wood. Over time, the woods instil their own unique character into the the liquid and through gentle evaporation, a sweet and complex substance with a startling natural density is created. As per consortium regulations the 100ml bottle designed by Giugiaro is used. Just a few drops of this can exhalt any dish, from grilled meats to sweet and sour. Try it with fruit, all kinds of desserts and icecream.

Castel del Monte DOP Extra Virgin Olive Oil (750ml) - The Terra di Bari - Castel del Monte PDO regulations require producers to use at least 80% of the local olive variety, the splendid Coratina, but allows 20% for other (cheaper) olives. Our producer (Granoro) uses 100% Coratina right from the heart of the Castel del Monte PDO zone. The olives are grown totally naturally, without the use of pesticides or chemical fertilizers. The oil is delicate and fruity with low acidity. It has a nice piquant aftertaste due to high levels of polyphenols and antioxidants present in the Coratina (good for the arteries and skin). It is green with yellow reflexes. A great all-rounder for salads, veg, fish and meats.
