It contains more vitamins, amino acids and minerals than other durum wheats and is very easily digested. Senatore Capelli pasta always maintains its shape during cooking to give delightful results. The pasta is extruded through bronze dyes to leave a rough surface which really binds sauces and is then dried slowly at low temperatures.
