A wonderful combination of green and golden yellow tagliatelle nests, which make a delicious and enjoyable change to classic white tagliatelle.
Paglia e fieno tagliatelle is a classic of Italian cuisine. It means straw (gold yellow) and hay (green - before it dries out)
The tagliatelle nests are made by artisan producers Grania, from Naples using only the finest ingredients, durum wheat blended with fresh spinach and classic durum wheat. The pasta strands are then drawn through bronze dies which give the pasta a rough surface to really bind the sauces.
It pairs brilliantly with lots of sauces from rich ragus to light summer vegetables. Some classic examples include Ham, peas and cream; Tomatoes and basil; pancetta and mushrooms; tagliatelle paglia e fieno wth artichokes is delicious as is mixed fish in a tomato-based sauce.
