What is Saba?

It is a unique and totally natural sweet dressing that has been used for over 5000 years in the Mediterranean region as a sweetener. It starts from exactly the same production process as balsamic vinegar where Trebbiano or Lambrusco grapes from the Modena - Reggio Emilia regions are left on the vines until they are bursting with sugar. After careful pressing, this grape must is then boiled in large open pots to reduce it to around a third of its original volume and concentrate the natural sugars.

Instead of entering the vinegarisation process, it goes directly into barrels of different wood for aging - in this case oak, juniper and chestnut and stays there for 2 to 3 years. The result is a delightfully sweet, fruity dressing with flavours of raisins and plum and the complex hints of wood.

In the kitchen it is extremely versatile, for marinades, roast meats and vegetables, pasta sauces, sweet and sour dishes as well as a base for cooking desserts or dressing fruit salads.
