In Italy, Orzo pasta comes under different names but they all refer to small barley (orzo) or rice-grain shaped pasta. Ours is called Rosemarino and is made from quality durum wheat which holds its texture and firmness perfectly while cooking (particularly important with Orzo pasta otherwise you might end up with a gooey mess!).
