Our Parmesan cheese is creating quite a stir in the UK. It has won many awards including gold medal at the World Championship and double gold at the Great Taste Awards. It is produced in the mountain region between Modena and Bologna (perfect grazing conditions for high quality milk) by expert artisans, like Claudio pictured here, who are part of a cooperative of small farms.
The Petrucci brothers are also award winning artisan cheesemakers and they transform mountain Ewe’s milk into stunning pecorino cheeses. We have a 30-day aged fresh pecorino as well as delightful truffle, chilli and walnut pecorinos.

Our Pecorino with Saffron is made by the Fratelli Petrucci, award winning artisan cheesemakers from the mountain areas between Lazio and Umbria. Here the sheep graze peacefully on the area's fragrant voluptuous pastures and the Ewe's milk obtained is rich, creamy and full of flavour.
It is left to rest for 30 days until it reaches a semi-soft consistency and acquires its lovely mild fresh flavours that combine so well with the refined personality of the saffron.

SUGGESTIONS - HOW TO USE
It is ideal on its own with a glass of white or sparkling wine.
Try it with a drizzle of honey and fresh pears.
It is a classic antipasto cheese that can be enjoyed on crusty bread or with a selection of cured meats and olives.
Splendid little amuse bouche for cocktails.
Goes perfectly with chutneys or our fruit conserves.
Try it in all kinds of salads.

This fine Pecorino cheese is made from mountain Ewe's milk and aged slightly for 40 days in caves to acquire its lovely semi-soft texture and mild, fresh flavours which blend perfectly with the walnut pieces inside.
A peerless addition to any cheese board, it's also wonderful with honey, in many types of salad, on sandwiches or toast. For a classic Tuscan speciality, try it with pears!

This Pecorino "Diavoletta" or "Little Devil" is a delicious young pecorino cheese with hot Sicilian red chillies.
It is made by artisan cheese masters, the Petrucci brothers from quality milk from Ewe's grazing on the amazing and lush slopes of Mount Terminillo in North Lazio-Umbria border. The cheese is aged for just 40 days in caves where it acquires its semi-soft texture and addictive mild creamy flavours. The addition of red chillies add an unforgettable finish with a subtle crescendo of warmth creating a wonderful contrast with the creamy nature of the pecorino.
The Diavoletta makes a great appetiser diced with salami and vegetables and is a true classic to round off a meal, on its own with a glass of full-bodied red, with honey or pears or chutneys.

Produced by the Fratelli Petrucci, award winning artisan cheesemakers from the mountain areas between Lazio and Umbria. Here the sheep graze peacefully on the area's voluptuous pastures and the Ewe's milk obtained is rich, creamy and full of flavour.
Whole pieces of fresh truffle are added to the milk and the Pecorino is left to rest for 30 days until it acquires its semi-soft consistency and mild yet vivid and fresh flavours.
Our truffle Pecorino is wonderful on its own with a full bodied red and also combines perfectly with many dishes including mushroom or vegetable risottos, thinly sliced on an omelette or potato gratin (marvellous!) and alongside cured meats and honeys. It is the star attraction on any cheeseboard!

Loved by adults and children alike, it can be grated onto stronger tasting sauces and is lovely in a salad, but try it on its own with an aged balsamic vinegar and a glass of fine wine. From a collection of original accessories from the Consozio Parmigiano Reggiano (www.parmiggiano-reggiano.it). It's always fascinating to observe a huge 38kg Parmesan wheel being prized open (parmesan is never cut) using a few of these traditional almond shaped knives.
These inexpensive knives are also used in households all around Italy for breaking off little rocks or pieces of parmesan. Just leave a piece of Parmesan on the table (at a buffet or as an appetizer or after dinner cheese) with a few of these knives for guests to dig in and cut out small chunks. Easy and very Italian!
It has the traditional almond-shaped stainless steel blade and wooden handle.
