Delicious sundried San Marzano tomatoes straight from the Gulf of Naples! One of the most highly regarded tomato varieties in its most flavoursome form. Large 420g jar, so plenty for everyone.
Open up and enjoy the fragrant aroma, which makes way to the San Marzano's sweet, yet super-zesty character. Their rich and robust flavours have slowly concentrated in the Mediterranean sunshine to produce an ideal ingredient to flavour thousands of dishes (see below for a few suggestions) while on their own, they perform a virtuoso role as an essential part of any Italian antipasto.
These sundried San Marzano rest in a traditional Neapolitan marinade of sunflower oil, garlic, peperoncino chilli, oregano and wine vinegar. A perfect balance of flavours is acheived.
They have a lovely consistency, easy to slice and dice and require no reconstitution. Just open the jar and you're ready to go!
Tomatoes are such a fundamental part of Mediterranean cuisine, drying them naturally in the sun was a logical step to ensure a year round supply. However, as with all popular ingredients nowadays, there is an increasing demand for large scale industrial production. Most "sundried" tomatoes on the market are distinctly sunshine-free and should be referred to as "oven-dried" because that's how they are prepared. They are often bland and overly dry.
Fortunately, these Gemme del Vesuvio tomatoes are prepared following traditional artisan methods which have been used in Southern Italy for centuries. Thay are picked at their very ripest, full of natural sweetness and are then hand cut and laid out on long drying tables while the summer sunshine slowly takes care of the rest.
Sundried tomatoes retain all the nutritional properties of fresh ones. So they are high in Lycopene, antioxidants, vitamin C and low in sodium, fat and calories.

HOW TO USE - SUGGESTIONS:
Here are just a few suggestions for this super-verstaile ingredient. With a little imagination, it's easy and fun to create countless other recipes. Remember the flavour is quite intense so you don't need that many.
On their own on Bruschetta or Crostini (small pieces of crusty bread or crackers are fine).
Empty them into a bowl, add a drizzle of olive oil and basil, then find the cocktail sticks!
Either whole or chopped up, they are splendid in all kinds of salads: Green, pasta, rice, potato....
One of the most popular uses is in pasta dishes or risottos.
Try them with grilled fish together with other vegetables.
Great with soft cheeses and fresh basil - Ricotta and Mozzarella work really well.
Use as a side complement for cheeses, Italian cured meats and hams and all kinds of fresh veg.
Commonly used to flavour sauces and stews - even a small amount can liven up placid sauces.
An absolute must on pizza.
They will liven up any sandwich or panino.
Use as a side to grilled or baked fish or roast chicken.
Splendid on omelettes.
Chop them up finely and use as part of a stuffing or in soups.
They are lovely baked into focaccia or rustic bread.
TIP:
Once finished, use the oil as a condiment to flavour salads or vegetables.

STORAGE:
Natural product with long shelf life. Once opened, keep the tomatoes covered with oil in the fridge and consume within 10 days. They can be frozen: make sure they are covered in oil in the jar and freeze.

Here is an original twist on a popular classic. The true Bolognese ragu recipe calls for minced veal and pork. Since Tuscany is home to two of Europe's finest breeds, chefs Rosalia and Piero Caruso from CastelFiorentina near Siena, decided to make a Tuscan version of the popular Emilian dish.
The veal is from the Chianina, famous for the legendary Fiorentina steak and the pork is from the Cinta Senese, renowned as the sweetest, most flavoursome pork in Italy. This thrilling combination of premium minced meats is expertly prepared with a traditional base of extra-virgin olive oil, white Tuscan IGT wine, chopped tomatoes, red onion, celery, carrots, parsley and Tuscan herbs and spices. It contains no artificial preservatives, colourings or additives.
A feature of this range of sauces is their long, very slow cooking. The meat is gently simmered until it is fall-apart tender and has released all its flavours and aromas into the dense sauce. It is hearty and robust so you only need to coat the pasta with it (see our cooking tip below).

HOW TO USE - SUGGESTIONS
The ragu only requires heating and it's ready to receive the pasta.
The classic pasta for a Bolognese style ragu is Tagliatelle. Other long pasta like Papardelle, Bucatini, Linguini or Spaghetti also work well.
Delicious served over polenta.
Works well on crostini or small pieces of toasted bread.
Can be used as a risotto sauce or over potato gnocchi.
For a more Brit-based recipe, this ragu goes rather well over boiled potatoes or mash!
It is so thick and tasty it makes a great topping for crostini or thick crusty bread.
Garnish with freshly grated 24 month parmesan cheese.
Serve with a Chianti DOCG Riserva.
TIP
Extend the sauce by adding a couple of tablespoons of the pasta cooking water and a tablespoon of extra-virgin olive oil. Remember Italians don't smother the pasta in mountains of sauce and that's why the quality of the pasta is so important. The sauce can be extended further by adding a little tomato passata.

Whereas hare is rich and gamey in flavour, good wild rabbit from Tuscany has a fresher, lighter taste, ideal for an all year round pasta sauce.
The ragu has a particularly high meat content from the best cuts of the rabbit, which is prepared with a traditional ragu base of extra-virgin olive oil, red Tuscan IGT wine (Tuscan reds are particularly suited to this job), chopped tomatoes, red onion, celery, carrots and Tuscan herbs and spices. Real pesto genovese is based on fresh Ligurian PDO basil which is renowned for its small leaves and lovely, distinctive aroma. However, as with all popular ingredients nowadays, there is an increasing demand for large scale industrial production. Most "sundried" tomatoes on the market are distinctly sunshine-free and should be referred to as "oven-dried" because that's how they are prepared. They are often bland and overly dry. Luckily, these Villa Reale tomatoes are prepared following traditional artisan methods which have been used in Sicily for centuries.
From July to September, the Licata family harvest their own tomatoes when they are at their ripest. They are quickly sliced in half and sprinkled with the fabulous sea salt from Trapani. One by one they are placed on wooden grills for good air circulation and laid out along tables stretching out in the open fields. For the next 5 or 6 days, they slowly dry, naturally in the Sicilian sun. This slow drying gives them their vivid red colour and great depth of flavour.
