This is a traditional 750g Panettone made by Dal Colle in Verona. It is their signature cake.
Dal Colle have been producing delicious cakes since 1896. Today they still use the original century old artisan recipes based on quality ingredients, including traditional natural mother-dough and very slow leavening processes.

Tha Dal Colle family bakery and the "Leavening Wizard"
The Dal Colle bakery is now in its 4th generation. Incredibly they use the same live mother-dough stock that was first used over 100 years ago. It was "created" by Egidio Dal Colle, who became known as the "Leavening Wizard" and who won the gold medal for best Italian baker in 1925.
Since then the Dal Colle family have not only upheld the heritage left by their great grandfather, they have extended it. The current MD, also called Egidio Dal Colle, has developed a new natural yeast which is now patended and used by a select group of master bread makers and bakers. This is the natural leaven used in the family's traditional Panettone and Pandoro.
