Orders placed before 11.00 am are usually despatched the same day to arrive with you the next day. The truffles are shipped in special packaging to arrive in perfect condition.

NB Ordering for the weekend: We strongly recommend ordering by 11.00am on Wednesday if you need the truffles for the weekend. This is our "better to be safe" policy because when transporting goods internationally, delays do sporadically occur. NB the truffles will still be in perfect condition at the weekend.

Italian truffles are one of the world's greatest and most sought-after gourmet ingredients and their alluring aroma and the remarkable flavour they add to countless dishes is absolutely unique. They're not cheap, but for a special, unforgettable dinner, it won't break the bank either.

 

FRESH WHITE TRUFFLE FAQ

How do I use a fresh white truffle in the kitchen?

White truffles are as easy as pie to use! Normally white truffles are simply sliced onto dishes just before serving or at the table. Try on potatoes, eggs, meats, risotto, many pasta sauces, the list is endless!

How much should I use?

It depends on the dish. For a main course, top restaurants would shave around 10g per serving, however for us mere mortals (as long as the truffles are good quality and fresh) 6 - 8g would be perfect.

How do I store a fresh truffle?

Truffles are 90% water which captures all the truffle aroma and flavour, so the key is to slow down the water evaporation.  Wrap each truffle piece in kitchen role/tissue and cover with tin foil and keep in the fridge. Replace the tissue every day. Another option is to keep the truffle immersed in a glass of water in the fridge. Change the water each day.

How long will fresh truffles keep for?

If correctly stored, white truffles will keep for 7 days and black truffles for 10-12 days.

Can I do anything with left-over fresh truffles?

Absolutely! A couple of easy ways to glean full advantage of the left-overs is to infuse into olive oil to make truffle oil, or finely chop the truffle and mix together with a good butter. You can use both these for preparing dishes and adding that lovely truffley flavour.

Why do prices vary?

Since it is a totally organic and cannot be cultivated, there is no control over its growth which can be affected by numerous factors, mainly the weather. For this reason the quantities collected by hunters fluctuate over the season and so to do prices. We try to hold our prices for at least a week, but occasionally in periods of high demand/low availablity prices will change every 2 or 3 days.

What other types of Italian truffles are there?

In addition to the white, following are the most common types of Italian truffles and when they are available:

  • Winter Black (also known as Precious Black or Perigord) Tuber Melanosporum
  • Season - Dec - mid march
  • Autumn Black or Bugundy (Tuber Uncinatum)
  • Season - End Sept - End Jan
  • Summer Black (Tuber Aestivum)
  • Season - March - September
  • Spring White or Bianchetto (Tuber Borchii Vitt.)
  • Season - Feb - Mid May

What about the preserved truffles you sell?

The majority of the unsold fresh truffles in Italy, especially the smaller pieces, go into producing preserved truffles and various truffle derivatives such as oils, butter and sauces. These are not the same as fresh because their aroma and flavour is milder, however their long shelf life (up to 4 years) means you can enjoy them at any time of the year and they are a great way to experiment with truffles.
