Many regions across Italy have their own variations with varied protected status’. Made from authentic, quality pork which is covered in salt and cured for a few weeks. Then typically after going through a process of dry aging for around 12-36 months the combination of time air and salt results in a delicate, sweet flavour.
This cut of meat can be seasoned with a variety of different herbs and spices and the longer the duration of the dry aging process can result in a much more complex taste.
