Delicious grilled artichokes from Puglia in olive oil. Large format version, lots for everyone!
Artichokes from Southern Italy are renowned for their fullness of flavour which really comes to the fore when grilled. They are tender, easy to use and quite delicious!
The artichokes are cut into quarters, grilled then left to rest in a traditional Puglian dressing with garlic, mint and chilli and make a wonderful antipasto or side dish. Try them with crostini, bruschetta or toast, they also make a fine side dish for meat based main courses and are delightful in cold pasta or rice salads.
