Try it spooned on top of foccacia, pita bread or thick toast.
Perfect for a tasty pasta or risotto sauce (add a little EV olive oil and a touch of tomato passata)
Use as a side dish to chicken, roast meats (delicious with game), shell-fish, grilled or baked fish (add some lemon juice for extra zing).
Aubergine caponata also makes a splendid sandwich filler and goes perfectly with potatoes, aged cheese and in rice or bean salads.
Add a little aged balsamic vinegar to enhance the sweet and sour.
Best served at room temperature and not cold from the fridge.
