The Salvatico is a unique cave-aged Pecorino which combines elegant fragrance and emphatic flavours.
It is how Pecorinos were made once upon a time and with over a century of cheese-making expertise and artistry, the Petrucci family have made the Salvatico one of their signature products.
It is made from high quality mountain Ewe’s milk and is left to age in caves near Mount Tempranillo in Lazio for 6 months. In this time it forms a semi-hard paste which is slightly brittle and brilliant white.
It is perfect as a stand-alone cheese or on a quality cheeseboard. For something different, try it with a glass of fruity white or rosé wine.
It comes with a lovely, natural raffia ribbon and traditional bow. The Salvatico makes an elegant and charming guest at any dinner table!
