The Pecorino is made exclusively from high quality organic pasteurized sheep milk which is transformed within 24 hours of milking.
It is aged briefly for around 45 days to give a pleasant softness that is unequaled among other Pecorino of this age. It is round with a thin crust and ivory paste which is smooth and creamy to taste. The sheer quality of the organic milk is tangible in every taste. Its soft texture and absorbing flavour means it is suitable at any point of a meal, from the appetizer to the cheese board.
Wonderful alone with good fresh bread try with olives and cured meats. Excellent combination with fruit or citrus honey to enhance its sweet and sour contrast. Accompany with a slightly sparkling white wine.

The Storico Caseificio was completely destroyed by the 2016 earthquake and has now reopened after a full renovation. The celebrated producer is situated in a zone of stunning beauty inside the National Park of Gran Sasso and the Laga Mountains where the sheep graze in lush pastures and produce the most wonderful milk, perfect for quality sheep cheese!
