A fabulous pecorino cheese from the newly rebuilt historical cheese makers of Amatrice. Storico Caseificio of Amatrice.
The Pecorino is made from high quality pasteurized sheep milk which is tranformed within 24 hours of milking.
It is aged for around 5 months and features a pleasant softness that is unequaled among other Pecorino of this age.
The pecorino is round with a thin crust and warm golden hues while the paste is lightly glazed white and tender. It’s absorbing flavour means it is suitable at any point of a meal, from the appetizer to the cheese board.
Wonderful alone with good fresh bread try with olives and cured meats. Excellent combination with citrus honey to enhance its sweet and sour contrast. Accompany with a slightly sparkling white wine.
