Wild boar bresaola has many uses, notably on its own, sliced thinly with a drizzle of good olive oil and a splash of lemon or served with shavings of 30 month Parmesan.
It also pairs magnificently with fruit – try it with pears, kiwi or avocado together with a soft cheese and walnuts. Pieces will keep for several weeks wrapped in foil in the fridge.
