In the sun-soaked climes of Southern Italy, the tomatoes are left till the very last moment when they are bursting with natural sweetness and flavour. They are harvested and processed within 1 to 3 hours to ensure all that freshness and taste is captured. Free from seeds and skin it is simply the pure, dense juice of tomatoes.
Unlike many watery tomato Passatas found in the UK, it has an extremely high natural density (8-9° brix) so you get much more flavour from less product. Use this as the base for literally thousands of splendid sauces!
