This is a wonderful smooth passata (tomato puree) made from an ancient variety of San Marzano tomato grown in the fertile volcanic soils around the Naples area.
The tomatoes are, incredibly, culitivated by hand and once harvested they are immediately passed through large-holed sieves to remove skin and seeds to produce a lovely thick consistency, just like a home-made sauce.
The bright, vivid and enduring flavour of this special passata makes superb pasta sauces for vegetables, meat or fish. But it doesn’t stop there… Try it in any recipe which calls for a tomato puree base. It’s delicious on pizza too!
