When Porcini mushroom oil is heated its splendid aromatic compounds begin to evaporate (offering its wonderful aroma) and these will diminish over time. For this reason, it is best to add this porcini mushroom oil to a hot dish near the end of its preparation or just before serving. It is fine to refrigerate the oil (and it will keep its aromatic properties longer if you do). Just remember it will solidify so take out of the fridge an hour before using.
