Colomba is a delightfully fragrant leavened cake shaped like a dove (Colomba in Italian), the symbol of peace.

These beautifully handwrapped Colomba cakes are quite simply the best we’ve ever tasted (and we’ve tried a lot!). They all enjoy an extraordinary fragrance, lightness and a moist texture you can only experience with cakes literally fresh from the oven.

They are made by the Fiasconaro brothers in Sicily, for generations a family owned artisan bakery. The 3 brothers who run the bakery now still rigorously uphold the local artisan traditions of their father and grandfather. This is slowfood at its best – each cake taking nearly 4 days to bake!

Such quality is almost matched by its stunning and elegant presentation. It really makes a memorable gift for any occasion.

Ingredients

Soft wheat flour, butter, sugar, fresh eggs, candied pear (9%) (pear, glucose-fructose syrup, sucrose, lemon juice concentrate), White chocolate covering (8%) (sugar, cocoa butter, whole milk powder, emulsifier: soya lecithin, natural vanilla flavouring), fresh egg yolk, natural yeast (Wheat flour, water, yeast), chocolate of couverture (contains soy), Pear granulate (1%) (fruit (pear juice (16%), pear puree (14%), apple puree (9%)), fructose syrup, sugar, rice flour, cacao butter, gelling agent: pectin, acid: citric acid, natural flavourings, acidity regulator: potassium citrate), Sicilian honey, emulsifier: mono-and digycerides of fatty acids, “marsala PDO” wine, cocoa butter, skimmed powder milk, salt natural vanilla flavouring, rice flour, wheat malt, glazing agent (shellac, gum arabic).

May contain traces of tree nuts, lupin and mustard. Store in a cool, dry place.
