The winter black truffle (Tuber Melanosporum) comes under many names including Perigord, Precious black or Sweet rare black and is, after the fabled white truffle, considered the most precious and desirable. Renowned for its complex, slightly sweet notes and earthy undertones, it’s the most aromatic of the black truffles. Prices can reach £2000/kg for fully mature, whole pieces.
