Cured meat is meat which is preserved through various methods such as brining, smoking, salting, canning, ageing and drying. Curing dates to ancient times where storing meat safely and preventing food poisoning was essential. The goal of curing meat is to slow spoilage and prevent the growth of microorganisms.
