The Colomba cake is a wonderfully fragrant leavened cake in a shape of a dove which is Colomba in Italian and is known as the symbol of peace.
This beautifully hand wrapped Colomba cakes have been made by Fiasconaro brothers in Sicily which has been around for generations. The 3 brothers who run the bakery today still rigorously uphold the local artisan traditions of their father and grandfather. This is slow food at its best taking almost 4 days to cake and create each cake.
The brothers use only the best natural ingredients: Avolan almonds, Normandy butter, fresh Sicilian Candied Oranges bathed in aromatic Marsala and Zibibbo wines and the finest Manitoba Durum Wheat flour. Fiasconaro are one of only a handful of bakers who still use a live mother dough (now over 40 years old) and, with the slow leavening process, affords incredible softness and moisture. Wonderful!
