The Tuscan Aglione is a variety of garlic typical of the Valdichiana, in southern Tuscany, between Arezzo, Siena and Perugia.
It differs from common garlic by its size (a “head” can weigh up to 800 grams), its digestibilty and delicate flavour, (nicknamed “kiss-proof garlic”).
Here it’s blended with delicious Marinda Tomatoes to create a superb, tasty sauce.
Perfect with any type of pasta, on its own or with the addition of mushrooms, sausage, or pancetta. Try it too with capers and anchovies or clams and mussels.
Great as a bruschetta topping as well!
