Linguine alla Vegetariana – Vegetarian Linguine

Instructions
- Bring a large pot of salted water to the boil. Cook the Linguine according to the package instructions. Reserve 1 cup of pasta water, drain and leave to one side.
- Chop the peppers and then half the tomatoes.
- Heat the oil in a large pan over medium heat. Add the peppers, tomatoes and garlic, sauté for 1 minute. Add the butter. Add the spinach and sauté until just wilted.
- Add the cooked drained pasta with half the cup of pasta water over a low heat and toss together until the butter is melted. Turn off the heat.
- If the pasta is too dry add the remainder of the water. Season with salt and black pepper Serve and Enjoy!
