Vegetarian Linguine

Linguine alla Vegetariana – Vegetarian Linguine

Instructions

  1. Bring a large pot of salted water to the boil. Cook the Linguine according to the package instructions. Reserve 1 cup of pasta water, drain and leave to one side.
  2. Chop the peppers and then half the tomatoes.
  3. Heat the oil in a large pan over medium heat. Add the peppers, tomatoes and garlic, sauté for 1 minute. Add the butter. Add the spinach and sauté until just wilted.
  4. Add the cooked drained pasta with half the cup of pasta water over a low heat and toss together until the butter is melted. Turn off the heat.
  5. If the pasta is too dry add the remainder of the water. Season with salt and black pepper Serve and Enjoy!

Ingredients

TIPS:
Sea salt is rich in minerals. Sauté - cooking in a small amount of fat in a hot pan. A drizzle of quality Olive Oil adds a nice finish.
