Why are Leone Chocolates so Special?
Leone’s chocolate factory really is a magical place. They have re-introduced original 19th century chocolate-making machinery first used when Turin was considered the chocolate capital of the world. There is no mass-production here. Quality chocolate requires time and patience and the quality starts from the raw ingredients.
Carefully selected cocoa bean varieties from the world’s finest plantations pass through one of the most crucial phases in chocolate excellence, the roasting. The beans are very slowly roasted in-house at low temperatures (Leone are one of only a handful of European producers to roast their own beans) until the perfect aromas are achieved. This gives Leone’s chocolate its own signature character and distinguishes it from others.
The beans are then kneaded (conched) for over 60 hours in the magnificent old porphyry stone conches. Slowly and carefully to preserve the special nuances of cocoa flavour.
Only the highest quality fresh milk is used (no powder) to give life to the fullest and freshest taste. The addition of other ingredients in the unique assortment of Leone chocolates are also of the highest quality. From the use of brown sugar, vanilla in pods, IGP Piedmont hazelnuts and green Bronte pistachios!
