It’s always fascinating to observe a huge 38kg Parmesan wheel being prized open (parmesan is never cut) using a few of these traditional almond shaped knives.
These inexpensive knives are also used in households all around Italy for breaking off little rocks or chunks of parmesan. Just leave a piece of Parmesan on the table (at a buffet or as an appetizer or after dinner cheese) with a few of these knives for guests to dig in and cut out small chunks. Easy and very Italian!
