A fabulous combination of whole and crushed green and black Nocellara olives with aromatic herbs.
They are prepared following a centuries old recipe which originated from the Franciscan monasteries in Sicily. The monks were tending olives on the island as early as the 11th century and with an abundance of local ingredients at hand, their creative chefs formulated some wonderful recipes which still form the basis of many dishes today.
These olives are left to bathe in extra-virgin olive oil and traditional wine vinegar with natural herbs including wild bay leaves and oregano.
HOW TO USE – SUGGESTIONS
These olives make a wonderful, tasty starter on their own or as part of an antipasto platter. They are delicious with soft cheeses, cured meats or try them as that special ingredient to invigorate any sauce which benefits from the addition of olives.
