What is Saba?

Saba is a unique and totally natural dressing that has been used for over 5000 years in the Mediterranean region. It is in fact the world’s first natural sweetener, but it’s so much more than that…. Saba starts from exactly the same production as balsamic vinegar.

Trebbiano grapes (usually) from Modena or Reggio Emilia are left on the vine until they are bursting with sugar. After careful pressing the juice, or must, is boiled in large open copper pots for many hours and sometimes days until it’s reduced to at least a third of its original volume and its sugar content has concentrated.

This sweet syprup is then poured into small barrels of different woods, often oak, juniper or chestnut where it ages for up to many years. The result is a fabulously fragrant, dense and fruity dressing with the complex notes of wood. It is charming, elegant and incredibly versatile – check below to see just how versatile it is!
