This is a wonderful Semi-Curado (semi-aged) Manchego PDO cheese which is aged from 2 to 3 months.
Manchego PDO cheese is a true Spanish classic from the region of La Mancha and this is one of the finest examples from a local artisan producer.
It is made with pasteurised sheep’s milk from the Manchega breed which feed on the wild vegetation typical of La Mancha and that makes the Manchego cheese so special.
As a young manchego, it has a fresher yet nicely developed taste with a creamy and moist texture and a hint of sweetness and piquant after taste.
Perfect with fruit or compotes and dry white wine. Lovely too as on a sandwich with some fine Spanish cured meats!
Storage
Keep refrigerated. Best served at room temperature.
