The superb gentile salami was once the salami of choice in Northern Italy and still stands out today for its unique flavour and texture.
A traditional mountain salami whose name derives from its thick casing (Genile) which keeps the seasoned meat perfectly soft and allows it to mature for a much longer time than other salami, without drying out. This in turn, allows all the flavours of the quality pork meat and seasonings to really develop and harmonise.
It has a mild sweetness with a hint of spice and a lovely pronounced and alluring fragrance. It is low in fat and very tasty.
Cut into medium-thin slices and serve with fresh bread. It makes an excellent antipasto starter on its own or together with other cured meats. Delicious with cheese or grilled vegetables and pickles. It makes a lovely sandwich filling too.
This is the half salami version in a very convenient size.
